Breaded Chicken Cutlets

Start with chicken at room temp. Cover chicken and pound to ½ an inch.  Use a meat mallet or rolling pin.

Get 3 shallow dishes. Mix bread crumbs + cheese in one.  Flour + paprika in one. Eggs + Garlic in one until frothy.

Dredge Chicken in Flour

Dredge in flour, shake off excess.

Dredge Chicken in Eggs

Then dredge in eggs, and allow excess to drip off.

Dredge Chicken in Panko

Then dredge in panko crumbs.

Let Coating Dry!

– Place on a wire rack sprayed with non-stick spray. – Let sit for 5 minutes to allow drying.

Heat Oil and  Cook Chicken

In skillet add oil, and heat. cooking until golden brown on both sides.
